Instructions
Brown the Meat:
In a large pot or Dutch oven, heat olive oil over medium-high heat.
Add ground beef, season with a pinch of salt and pepper, and cook for 5-7 minutes, breaking it apart until browned. Drain excess grease if needed.
Sauté the Aromatics:
Add the onion and cook for 3 minutes, stirring occasionally.
Stir in garlic and cook for another 30 seconds, until fragrant.
Build the Flavor:
Stir in tomato paste, diced tomatoes, crushed tomatoes, kidney beans, black beans, beef broth, and Worcestershire sauce.
Add all the spices and stir well to combine.
Simmer to Perfection:
Reduce the heat to low and let the chili simmer uncovered for 45-60 minutes, stirring occasionally.
If using a slow cooker, transfer everything after Step 3 and cook on LOW for 6 hours or HIGH for 3 hours.
Taste & Serve:
Adjust seasoning if needed. Serve hot with cheese, sour cream, or fresh cilantro.
