Spicy Shrimp Pasta
Equipment
- Large pot (for pasta)
- Skillet or sauté pan
- Tongs or spatula
- Strainer (for pasta)
Ingredients
For the Pasta:
- 12 oz spaghetti or your favorite pasta
- 1 tbsp salt for pasta water
For the Shrimp & Sauce:
- 1 lb large shrimp peeled and deveined
- 2 tbsp olive oil
- 4 cloves garlic minced
- ½ tsp crushed red pepper flakes adjust to taste
- 1 tsp paprika
- ½ tsp cayenne pepper optional, for extra heat
- 1 14 oz can diced tomatoes with juices
- ½ cup heavy cream
- 1 tbsp lemon juice
- Salt & pepper to taste
- 2 tbsp fresh parsley chopped, for garnish
- ½ cup freshly grated Parmesan cheese optional, for serving
Instructions
Cook the Pasta:
- Bring a large pot of water to a boil. Add salt and cook the pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
Cook the Shrimp:
- In a large skillet, heat olive oil over medium-high heat.
- Add the shrimp and season with salt, pepper, paprika, crushed red pepper flakes, and cayenne (if using).
- Cook shrimp for about 2-3 minutes per side, or until pink and cooked through. Remove shrimp from the skillet and set aside.
Make the Spicy Tomato Sauce:
- In the same skillet, add garlic and cook for about 1 minute, until fragrant.
- Add the diced tomatoes (with juices) and bring to a simmer. Let it cook for about 5 minutes to allow the flavors to meld.
- Stir in heavy cream and lemon juice, then simmer for an additional 2-3 minutes until the sauce thickens slightly. Adjust seasoning with salt and pepper to taste.
Combine Shrimp, Pasta, and Sauce:
- Add the cooked pasta to the skillet and toss to combine with the sauce. If the sauce is too thick, add a splash of pasta water to reach your desired consistency.
- Return the shrimp to the skillet and toss everything together.
Serve & Enjoy:
- Serve hot, garnished with fresh parsley and a sprinkle of Parmesan cheese.
Notes
- Use shrimp alternatives like scallops or chicken if you prefer.
- For a lighter option, substitute half-and-half for heavy cream.
- For extra veggies, add spinach or zucchini to the sauce.
