Ingredients
For the Pasta:
12ozspaghetti or your favorite pasta
1tbspsaltfor pasta water
For the Shrimp & Sauce:
1lblarge shrimppeeled and deveined
2tbspolive oil
4clovesgarlicminced
½tspcrushed red pepper flakesadjust to taste
1tsppaprika
½tspcayenne pepperoptional, for extra heat
114 oz can diced tomatoeswith juices
½cupheavy cream
1tbsplemon juice
Salt & pepper to taste
2tbspfresh parsleychopped, for garnish
½cupfreshly grated Parmesan cheeseoptional, for serving
Instructions
Cook the Pasta:
Bring a large pot of water to a boil. Add salt and cook the pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
Cook the Shrimp:
In a large skillet, heat olive oil over medium-high heat.
Add the shrimp and season with salt, pepper, paprika, crushed red pepper flakes, and cayenne (if using).
Cook shrimp for about 2-3 minutes per side, or until pink and cooked through. Remove shrimp from the skillet and set aside.
Make the Spicy Tomato Sauce:
In the same skillet, add garlic and cook for about 1 minute, until fragrant.
Add the diced tomatoes (with juices) and bring to a simmer. Let it cook for about 5 minutes to allow the flavors to meld.
Stir in heavy cream and lemon juice, then simmer for an additional 2-3 minutes until the sauce thickens slightly. Adjust seasoning with salt and pepper to taste.
Combine Shrimp, Pasta, and Sauce:
Add the cooked pasta to the skillet and toss to combine with the sauce. If the sauce is too thick, add a splash of pasta water to reach your desired consistency.
Return the shrimp to the skillet and toss everything together.
Serve & Enjoy:
Serve hot, garnished with fresh parsley and a sprinkle of Parmesan cheese.
